Vineyard to Wine
Hoffmann Vineyards always hand-picks our fruit. Our harvesters come from all parts of South America and pick from select portions of the vineyard at the winemaker’s direction to ensure the highest quality of fruit at harvest.
Grapes are placed in bins and stacked until transferred to the winery. Our grape harvest starts in the early morning hours when temperatures are cool to create a more stable environment for the crush.
Once the bins arrive at the winery, we destem and crush the grapes and pump the “must” over into concrete vats. We use selected yeasts to ferment the must between 75 and 78 degrees F.
